Our story

Highlander Oscypek made of sheep's cheese

Oscypek is a traditional sheep and cow cheese that tastes best between May and October, when the sheep are already grazing in the pastures, then they eat fresh grass, without chemicals, preservatives and artificial additives.

This unique taste of oscypek can be obtained only thanks to tradition and an unchanging recipe. Knobs are smaller forms of oscypek, their shape resembles barrels and their types depend basically on the imagination of the people who produce them. Knobs can be traditional, i.e. made according to a recipe like oscypek, i.e. from sheep's milk in the proportion of 70% sheep's milk and 30% cow's milk. They can also be made from cow's milk or 100% sheep's milk. As for the taste, the types of knobs delight with variety because there are more salty, mild buttery knobs.

Oscypek cheese and cheese are the highest quality products, produced with the utmost care, according to an old recipe from grandfather, and great-grandfather. Although the technology of its production has changed over the years, quality and tradition are the most important for us.
